Introduction:

Carbohydrates are the human energy source. The experiment is to examine the properties of carbohydrate such as physical property.

Observation:

The result shows that the saturation point of glucose is very high, which means it is highly soluble to water. Galactose is quite soluble in water. In the experience of making fudge, the sugar melt and finally form into solid. Which is implying the properties of sugar crystallization.

Volume of sugar:

(total vol. of beaker + water + sugar) - (total vol. of beaker + water)

Galactose: [(38.87+9.85+sugar) - (38.87+9.85)]/10ml = 0.677 mg/ml

Glucose: [(39.25+10.55+sugar) - (39.25+10.55)]/10ml = 0.914 mg/ml

From the results, as glucose is highly soluble in water, so that it can easily dissolve in blood to generate energy. Also, galactose is quite soluble in order to be abundance in human diet.

Compared with published values, Dehn, W.M. mention that the solubility of galactose is about 68.3g per 100ml of water (2). For glucose, Mark Bishop has shown that the solubility is about 91g per 100ml of water (1).
