Maltose Experiment 1 : Carbohydrates
Introduction: Carbohydrates are the principal source of energy in the human diet and this is usually present in the form of the polysaccharide starch. Carbohydrates are a type of macronutrient found in many food and beverage. Most carbohydrates are naturally occurring in based- food, such as grains. In this practical we exam some of the properties of carbohydrates including physical , functional and sensual.
Monosaccharides and Disaccharides
1) Relative Solubility of Carbohydrates, Glucose , Lactose& Galactose .
Purpose:
To test the saturation point of Galactose and Glucose in the water.(mg/ml)
Materials:
Beaker 1
Beaker 2
Labels (marks on beaker where possible)
Glucose
Galactose
Electronic pound
Water
Stirring bar
Magnetic stirrer
Forceps
Producers:In this experiment, the glucose and galactose was added in the beakers with a volume of 10 ml water .Then record the weight of each beaker and the beakers together with water. Subsequently add the quantities at a time of the specific sugar until no more can dissolve .When no more sugar will dissolve this will represent the saturation point at r.t.p ,can weigh the beakers again and obtain the weight of sugar added.
Date Form Experiment
The weight of beak ers | The weight of 10g(+/-1g) water together with beakers | The saturation point of solutions |
| |
Beaker1( Monosaccharides Glucose ) | 48.19g | 58.10 | 10.11g/10ml | |
Beaker 2(Disaccharides Galactose | 41.69g | 50.82g | 3.12g/10ml |
Discussion:In conclusion, the saturation of the Glucose expressed in 1.11g/1ml and the saturation of the
Galactose expressed in 3.12g/10ml.
2)Relative Sweetness and Taste Threshold
Purpose :To test the series of(10 bottles) solutions of different concentrations of three carbohydrates.
Materials:
Maltose solution
Sucrose solution
Glucose solution
10 bottles
Date Form Experiment
Sugar | Bottles |
Maltose | 3 |
Sucrose | 5 |
Glucose | 4 |
Discussion :Maltose is easier to taste sweet than Sucrose and Glucose. When I compare the taste with others group members, the result of other groups are similar .Then, it is fair test to each group because all group members will taste a small sample ( 1ml)of each solutions.
3)Salt Taste Threshold
Purpose :Test the series of solutions (10 bottles) of different concentration of NaCl.
Materials:
NaCl solutions
10 bottles
Date Form Experiment
Salt(taste) | Me | My Group members |
Bottle | 4 | 3 |
Discussion: I can detect a noticeable taste in bottle 4 first but my group members taste in bottle 3 first . It is different results with me. I think the different maybe contains the habitat of life .
4)Measuring Sugar concentration
Purpose: To measure the sugar concentration of taste threshold sample for the 3 sugars and test have how many %sucrose in each sample.
Materials:
3 sugar samples
Digital refractometer
